- 2â3 C. thin red bell pepper strips
- 2â3 C. finely chopped green onions
- 4 medium carrots, cut thinly into diagonal slices
- 2 small zucchini, cut into thin strips
- Basil Vinaigrette
- 1â2 C. olive oil
- 2 Tbs. finely chopped fresh basil
- 2 Tbs. finely chopped fresh fl at-leaf parsley
- 2 Tbs. balsamic vinegar
- 1 Tbs. capers
- 1 tsp. Dijon mustard
- 1â2 tsp. salt
- 1â2 tsp. pepper
- dash of sugar
