- 1/4 teaspoon of crushed and packed saffron threads â (1.25ml)
- Salt and pepper - to taste

- 4 tablespoons of olive oil â (60ml)
- 4 1/2 cups of fresh fennel bulbs, chopped (about 2) â (1 ½ litres)
- 3 cups of chopped shallots â (750ml)
- 1 tablespoon of crushed fennel seedsâ (15ml)
- 3 teaspoons of minced garlicâ (15ml)
- 2 cups of dry white-wine â (500ml)
- 1 cup of chicken broth â (250ml)
- 3/4 teaspoon of crushed and packed saffron threadsâ (3.75ml)
