- 2 egg yolks
- 1 teaspoon red wine or white wine vinegar (5 ml)
- 1 tablespoon lemon juice (15 ml)
- 3/4 cup olive oil (175 ml)
- 1/2 cup vegetable oil (125 ml)
- 1 clove garlic, minced
- 1/4 teaspoon cayenne or fresh chile, or to taste (1 ml)
- 1 tablespoon chopped fresh parsley (15 ml)
- 1 teaspoon capers (5 ml)
- Coarse salt and freshly cracked black pepper

- 8 oysters, shucked
- 1/4 pound large shrimp, peeled and de-veined (113 grams)
- 1/4 pound sole filets, cut into 1 x 3-inch strips (113 grams)

- 1/4 pound medium-sized sea scallops (113 grams)
- 1 red pepper, cut into 1-inch strips
- 1/4 pound green beans, trimmed (113 grams)
- 1 1/4 cups all-purpose flour (310 ml)
- 1/2 cup cake flour (125 ml)
- Coarse salt and freshly cracked black pepper, to taste
- 4 cups canola vegetable oil, for frying (1 litre)
