Seafood Fritto Misto (Fried Mixed Seafood)

Ingredients

Batter

  • 1/4 cup cornstarch (60 ml)
  • 1/2 cup all-purpose flour (125 ml)
  • 1/2 cup cake flour (125 ml)
  • 1 to 1 1/2 cups sparkling mineral water (250 ml to 375 ml)
  • Coarse salt and freshly cracked black pepper, to taste

Chile and Lemon Mayonnaise

  • 2 egg yolks
  • 1 teaspoon red wine or white wine vinegar (5 ml)
  • 1 tablespoon lemon juice (15 ml)
  • 3/4 cup olive oil (175 ml)
  • 1/2 cup vegetable oil (125 ml)
  • 1 clove garlic, minced
  • 1/4 teaspoon cayenne or fresh chile, or to taste (1 ml)
  • 1 tablespoon chopped fresh parsley (15 ml)
  • 1 teaspoon capers (5 ml)
  • Coarse salt and freshly cracked black pepper

Assembly

  • 8 oysters, shucked
  • 1/4 pound large shrimp, peeled and de-veined (113 grams)
  • 1/4 pound sole filets, cut into 1 x 3-inch strips (113 grams)
  • 1/4 pound squid, cleaned, cut body into 1/2-inch rings, tentacles left whole (113 grams)
  • 1/4 pound medium-sized sea scallops (113 grams)
  • 1 red pepper, cut into 1-inch strips
  • 1/4 pound green beans, trimmed (113 grams)
  • 1 1/4 cups all-purpose flour (310 ml)
  • 1/2 cup cake flour (125 ml)
  • Coarse salt and freshly cracked black pepper, to taste
  • 4 cups canola vegetable oil, for frying (1 litre)
