Ingredients
Quinte Crest Cheese Dressing
- 1/4 cup crème fraiche
- 1/4 cup plain yogurt
- 1/4 cup sour cream
- zest and juice of ½ a lemon
- 1 tablespoon extra virgin olive oil
- 1/2 cup Quinte Crest Cheese, grated
- salt
- pepper
Quinte Crest Cobb Salad
- 2 eggs, hard boiled and finely chopped
- 2 cobs of corn, boiled in salted water, kernels removed
- 1/4 red onion, finely diced
- 3 large radishes, julienned, reserve 2 tbsp for garnish
- 1/3 cup bacon, cooked until crispy and finely chopped, reserve 2 tbsp for garnish
- 1/4 bunch chives, finely chopped, reserve 2 tbsp for garnish

Assembly
- 5 romaine lettuce hearts, inner leaves only, separated, approximately 25
- 2 tablespoons radishes, julienned
- 2 tablespoons Quinte Crest Cheese, grated
- 2 tablespoons bacon, cooked until crispy and finely chopped
- 2 tablespoons chives, finely chopped
