Dark Fruitcake

Ingredients

  • 2 cups mixed candied fruit
  • 1 (16 ounce) jars mincemeat
  • 1 1/2 cups golden raisins
  • 1 1/2 cups dark raisins
  • 2/3-1 cup candied citron peel
  • 1 1/2 cups blanched whole almonds
  • 1 1/2 cups whole brazil nuts
  • 1 1/2 cups hazelnuts
  • 2 cups pecan halves
  • 2 cups dried apricots, coarsely chopped
  • 1 1/2 cups pitted dates, coarsely chopped
  • 3/4 cup wholecandied red cherries or 3/4 cup green glazed cherries(or combination, recommended)
  • 3 cups all-purpose flour
  • 1/4-1/2 cup extra flour, for coating fruits and nuts
  • 1 cup sugar
  • 1/2 cup dark molasses
  • 2 teaspoons vanilla
  • 1 cup dark rum or 1 cup brandy
  • 1/4-1/2 cup water or 1/4-1/2 cup orange juice
  • 4 -5 eggs(1 cup)
  • 1 cup oil(canola, safflower, corn, etc.)
  • 2 teaspoons salt
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon allspice
  • 1/4 teaspoon ground cloves
