  • 1 brown onion, thinly sliced
  • 2 garlic cloves, crushed

  • 2 tbs tomato paste
  • 380g (2 cups) couscous
  • Salt and ground black pepper, to taste
  • 375mls (1 1/2 cups) boiling vegetable or chicken stock or water
  • 85g (about 5 pieces) sun-dried capsicum, chopped
  • 50g (1/4 cup) currants
  • 40g (1/4 cup) shelled pistachio nuts
  • 1 tbs finely grated lemon rind
