Ingredients

  • 8 trussed baby egg tomatoes, halved
  • 2 tsp olive oil
  • Salt & freshly ground black pepper
  • 200g baby green beans, topped
  • 4 small (about 150g each, 2cm thick) tuna steaks
  • 1 x 400g can cannellini beans, rinsed, drained
  • 1 red onion, halved, thinly sliced
  • 1 x 80g pkt baby rocket leaves
  • Pesto dressing

  • 2 tbs pine nuts
  • 1/3 cup firmly packed fresh basil leaves
  • 60ml (1/4 cup) extra virgin olive oil
  • 2 tbs finely grated parmesan
  • 2 tsp fresh lemon juice
  • 1 garlic clove, crushed
  • Salt & freshly ground black pepper
