Ingredients
Basic salsa
- A mixed tomato salsa: 1 medium size tomato
- 12 yellow cherry tomatoes
- 1 shallot
- 1 large jalapeno chilli minced
- 2 tbs fresh chopped coriander
- 2 tbs fresh lime juice, salt and pepper
Salsa verde
- 1 cup flat leaf parsley
- 2 tbs capers drained
- 6 anchovies
- 3 cloves garlic
- 1 small red onion
- 100ml extra virgin olive oil
- salt and pepper
Grilled vegetable salsa
- 1 small red onion, sauteed
- 2 tomatoes, halved and roasted
- 2 cups chopped chargrilled capsicum
- 2 tbs pitted black olives
- 1 clove garlic
- 1/2 tsp ground cumin
- 1 tbs lemon
- salt and pepper, to season. Stir through 1/4 cup chopped rocket or basil before serving.
