  • 185ml (3/4 cup) boiling water
  • 1 tsp bicarbonate of soda
  • 80ml (1/3 cup) brandy
  • 125g butter
  • 155g (3/4 cup, firmly packed) dark brown sugar
  • 2 eggs
  • 225g (1 1/2 cups) self-raising flour, sifted
  • 50g (1/3 cup) plain flour, sifted
  • 1 tsp mixed spice
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 150g Angas Park Soft & Juicy Figs, coarsely chopped
  • 375ml (1 1/2 cups) bought vanilla custard
  • 125ml (1/2 cup) thickened cream
  • 2 tbs maple syrup
  • Pure maple syrup, extra, to serve
