  • 1 onion, finely chopped

  • 4 cups diced peeled potatoes
  • 1 cup diced carrots
  • 5 cups seafood, vegetable or chicken stock
  • 6 tablespoons unsalted butter, divided
  • 4 cups cubed cod, snapper or salmon fillets
  • 3 tablespoons all-purpose flour
  • 2 cups frozen whole kernel corn, thawed
  • 1 1/2 cups whipping cream
  • 1 teaspoon sugar
  • 1 pound shrimp, shelled and cleaned
  • 1 cup half-and-half
  • Salt and pepper, to taste
  • Red and green corn tortillas
  • Vegetable oil
