Ingredients

  • 2 cups julienned (1x1/4 inch) green bell peppers
  • 1 cup chopped onion
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 (24-ounce) jar CHI-CHI'S® Thick & Chunky Salsa Mild
  • 1/3 cup dry red wine
  • 3 tablespoons lemon juice
  • 2 teaspoons dried oregano leaves, crushed
  • 1 teaspoon ground cumin
  • 1 cup pitted ripe olives, cut in half
  • 2 tablespoons capers
  • 4 fish fillets (such as tilapia, snapper or halibut), (about 1 pound)
