Ham Soup With Black-eyed Peas And Hominy
Ingredients
- 2 tablespoons olive oil
- 1 cup chopped celery (2 stalks)
- 1 cup chopped onion (1 large)
- 3/4 cup chopped green sweet pepper (1 medium)
- 2 cloves garlic, minced
- 1 1/4 cups diced cooked ham (about 6 ounces)
- 1 teaspoon paprika
- 1/2 teaspoon sugar
- 1/2 teaspoon dry mustard
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried basil, crushed
- 1/2 teaspoon dried oregano, crushed
- 1/2 teaspoon dried thyme, crushed
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon cayenne pepper
- 1 15 1/2 ounce can black-eyed peas, rinsed and drained
- 1 14 1/2 ounce can golden hominy, rinsed and drained
- 1 14 1/2 ounce can diced tomatoes, undrained
- 1 14 ounce can chicken broth
- 1 tablespoon snipped fresh parsley
- 1 tablespoon mild-flavor molasses
