Twice-baked Potatoes

Ingredients

  • 2 large Yukon Gold potatoes (about 1 pound)
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 3 tablespoons milk
  • 2 tablespoons butter
  • 2 tablespoons dairy sour cream
  • 1 tablespoon chopped fresh chives
  • 1/4 cup finely shredded Gruyere or Swiss cheese
  • Salt and ground black pepper
  • Snipped fresh chives (optional)

Yukon Gold Potatoes Have Rather Thin Skins, So Be Careful Not To Damage Them As You Scrape Out The Pulp.
