1/2 cup warm water (105 to 115)
2 cups all-purpose flour
1/2 cup masa harina
1/4 cup yellow cornmeal
1 tablespoon salt
2 eggs
1/4 cup plus 2 tablespoons unsalted butter, softened
3/4 to 1 cup all-purpose flour
1 egg yolk, beaten
1 tablespoon water
