Easy Paella

Ingredients

  • 3/4 lb uncooked large shrimp, peeled, deveined
  • 3/4 lb sea scallops, each cut in half
  • 2 tablespoons olive or vegetable oil
  • Generous pinch plus 1 teaspoon saffron threads
  • 6 cloves garlic, finely chopped
  • 5 medium onions, chopped (2 1/2 cups)
  • 2 cans (14.5 oz each) diced tomatoes with garlic and onion, undrained
  • 1 can (14 oz) artichoke hearts, drained, coarsely chopped
  • 3/4 lb smoked turkey sausage, cut into 1/4-inch slices, slices cut in half
  • 2 cups uncooked basmati rice
  • 1 carton (32 oz) Progresso® chicken broth (4 cups)
  • 1 teaspoon paprika
  • Chopped fresh parsley, if desired
