Rustic Italian Squash Soup

Ingredients

  • 1 Pound hot Italian sausage
  • 5 pounds butternut squash
  • 2 tablespoons olive oil
  • 1 teaspoon each sea salt and fresh cracked black pepper
  • 1 cup chopped sweet onion (1/2 inch dice)
  • 2 medium peeled, chopped parsnips (1/2 inch dice)
  • 1 large peeled, cored Fuji apple (1/2 inch dice)
  • 1 quart reduced-sodium chicken broth
  • 1/4 teaspoon red chili pepper flakes
  • Sea salt and fresh cracked black pepper, to taste
  • 1/3 cup grated Parmesan-Reggiano cheese
  • Serve with roasted red pepper sauce (recipe below)
