- 1 Pound hot Italian sausage
- 5 pounds butternut squash
- 2 tablespoons olive oil
- 1 teaspoon each sea salt and fresh cracked black pepper
- 1 cup chopped sweet onion (1/2 inch dice)
- 2 medium peeled, chopped parsnips (1/2 inch dice)
- 1 large peeled, cored Fuji apple (1/2 inch dice)
- 1 quart reduced-sodium chicken broth
- 1/4 teaspoon red chili pepper flakes
- Sea salt and fresh cracked black pepper, to taste
- 1/3 cup grated Parmesan-Reggiano cheese
- Serve with roasted red pepper sauce (recipe below)
