    2 eggplants
    2 large zucchini, sliced lengthwise
    2 garlic cloves, minced
    5 1/2 oz fresh mozzarella cheese, drained and sliced
    2 1/2 cups vegetable stock
    2/3 cup quick-cooking polenta
    3/4 cup grated Gruyere cheese
    2 tsp thyme, dries
    salt and pepper
