Spinach Mushroom Soup

Ingredients

    1 bag baby spinach
    1 10-oz package mushrooms (baby bella/white)
    2 tbsp butter
    1 small onion, sliced
    1 clove garlic, minced
    1 bay leaf
    1 tbsp all-purpose flour
    1/2 tsp oregano
    1/4 tsp red pepper flakes (optional)
    6 cups low-sodium vegetable broth
    1/2 cup milk
    1/2 cup shredded cheese (cheddar/monterey jack)
    salt and pepper to taste

Description

I Used Vegetable Broth Instead Of Water, Which Is What The Original Recipe Called For. Each Serving Is Almost 2 Cups.
