Pasta E Fagioli

Ingredients

    Bacon, 8 slices, cut into 1/4" strips
    Onion, 1 cup, chopped
    Garlic, 3 cloves, minced
    Chicken stock, 8 cups
    Chick peas, 1 can
    Navy beans, 1 can
    Diced tomatoes, 1 can
    Carrots, 1 cup, chopped
    Celery, 1/2 cup, chopped
    Hamburger, 93% lean, 1 lb, cooked
    Tubilini pasta, 1 cup

    Salt, 1 1/2 teaspoons
    Pepper, 1 teaspoon
    Rosemary, 1/2 teaspoon
    Cinnamon, 1/4 teaspoon
    Red wine vinegar, 1 1/2 teaspoon

    Brown bacon until crisp. Remove from stock pot to drain. Cook onion and garlic in bacon drippings until onion is clear. Add chicken stock, chick peas, navy beans, diced tomatoes, carrots, celery, spices (except vinegar) and cook over medium heat until carrots and celery are tender.

    Cook hamburger in separate skillet.

    Add hamburger and pasta into stock pot and continue cooking until pasta is tender.

    Add vinegar and additional spices to taste. Stir well. Add bacon and stir. Serve hot.

    Add garnish of shredded parmesan cheese if desired.
