  • 8 small eschalots, peeled
  • 250g button mushroms, halved
  • 4 bacon rashers, sliced into 1cm strips
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 4 garlic cloves, crushed
  • 2 cups beef stock
  • 1 cup red wine
  • 1/4 cup tomato paste
  • 2 rosemary sprigs, creamy mashed potato, to serve.
