Roasted Salmon Salad With Honey Mustard Vinaigrette

Ingredients

    Non- stick cooking spray

    Dressing:
    1/2 C balsamic vinegar
    1/2 C water
    2 tsp dried cranberries
    8 dried apricots, thinly sliced
    2 tsp dijon mustard
    2 tsp honey
    1 tbsp olive oil

    Salad:
    1 pound salmon fillet, cut into 4 equal portions
    1/2 tsp salt
    1/4 tsp pepper
    8 C Spinach leaves, washed
    2 C thinly sliced yellow squash
    2 C thinly sliced red bellpepper
    3 tbsp toasted chopped pecans
