    65g dried apricots
    45ml orange juice
    30ml boiling water

    1/2tbs olive oil
    225g lamb steak chopped

    For the couscous:

    250ml water
    200g couscous
    1tsp of each orange, lemon and lime rind

    1/2 red pepper
    50g onion
    1/2 sweet potato
    1 garlic
    1/4tsp cinammon
    1/2tsp cumim
    1/2tsp coriander

    60ml dry red wine
    250ml chicken stock
    1/2tbs honey
    1/4 cup coriander leaves
    50g low fat yougurt
