Ingredients
- 1 tbsp of olive oil
1 green bell pepper (chopped)
3 stalks of celery (chopped)
1 c. of white or yellow onion (chopped)
2 cloves of minced garlic
dash of salt
dash of pepper
1 can of Fat Free, reduced sodium chicken broth
2 c. of water
1 lb of peeled crawfish tails (cooked)
6 mini corn on the cobs or 3 full ears (cooked and removed from cob)
3 red potatoes with skin (cooked and cubed)
1/4 tsp of cayenne(optional)
1/4 tsp of creole seasoning (optional)
You can add more or less seasoning based on what you like.
Some alternative ingredients: shrimp instead of crawfish or frozen corn kernels if you don't want to cook fresh ears of corn.
