    2 cups grated red (and/or green) cabbage
    1 cup grated carrot
    .5 cup chopped cilantro (optional)
    .5 cup each, thinly sliced:
    Green pepper
    Red pepper
    Red onion

    1 clove minced garlic
    1 T. maple syrup
    1 T. soy sauce
    1 T. sesame oil
    2 T. chunky natural peanut butter
    4 T. vinegar
    1 T. fennel seed (optional)

    Salt and red pepper to taste
