- 1 pound raw medium shrimp, peeled and deveined, shells reserved
2 quarts chicken broth
1 small bunch cilantro, chopped, with 1-2 tablespoons reserved
Handful of cilantro stems
1-2 tsps olive oil
One large onion, finely chopped, with 1 tablespoon reserved
2 cloves of garlic, finely chopped
1-2 fresh jalapeño chiles or 1 serrano chile, finely chopped, 1-2 tsps reserved
1 14.5 oz can of diced tomatoes, well-drained or 1 plum tomato, peeled, seeded and finely chopped
1-2 limes
Salt and pepper

This Soup Keeps Well In The Fridge, But I Don't Recommend Freezing. It's So Good That You Won't Have To Worry About Leftovers Though! Save Some Of The Reserved Toppings For The Leftovers And You Won't Be Disappointed. Makes An Excellent Remedy For Cong
