Lisa Fain’s Sour Cream-chicken Enchiladas

Ingredients

3  pounds boneless, skinless chicken breasts
Kosher salt and freshly ground pepper

4  tablespoons olive oil
2  tablespoons unsalted butter, plus more for baking dish
2  serrano chiles, seeds and stems removed, diced
2  garlic cloves, minced
2  tablespoons all-purpose flour
2  cups chicken broth
2  cups sour cream
1  cup chopped cilantro
1  teaspoon ground cumin
Dash of cayenne
1  (11-ounce) can tomatillos, drained
24  corn tortillas
10 ounces Monterey Jack, grated (2 ½ cups)
1  medium onion, diced
