Ingredients

    2 Tbsp vegetable oil
    2 tsp minced, peeled ginger
    2 garlic cloves, finely chopped
    12 asparagus spears, trimmed and cut on diagonal into 2-inch pieces
    1 c small broccoli flowerets
    1 carrot, peeled and cut into thin diagonal slices
    ½ c chicken broth
    6 shitake mushrooms, stems removed and caps thinly sliced
    1 small yellow pepper, finely chopped
    2 large eggs, lightly beaten
    1 c long grain rice, cooked and chilled
    12 oz medium shrimp, shelled, deveined, and cooked
    2 oz lean ham, cut into 2” by ¼’ matchstick strips (1/2 cup)
    ½ c frozen peas, thawed
    2 green onions, finely chopped
    2 Tbsp soy sauce
    1 ½ tsp sesame oil
    ¼ c chopped cilantro
