Ingredients
- Curried Chicken and Couscous recipe:
1 lb chicken sliced thin (I always use boneless skinless breasts)
1 Tbsp oil (olive or canola)
1 cup chicken broth
1 16 oz bag frozen veggie blend (I use broccoli, cauliflower and carrots, but you can use any other blend you prefer)
1 15 oz can garbanzo beans/'chickpeas'
1 tsp cumin
2-3 tsp curry powder
Cook chicken in skillet over med/high heat in oil. Add veggies, beans, broth, spices, bring to boil. simmer, covered, 8 minutes or until veggies are tender. Serve over couscous.
Couscous;
1 cup couscous (like mini pasta)
1 1/2 cups chicken broth
2 Tbsp olive oil
boil chicken broth in medium saucepan, add couscous, turn off heat, cover, let stand 5 minutes, then fluff with fork. Serve under curried chicken.
