Roasted Vegetable Manicotti With Cheese Sauce

Ingredients

    Manicotti and stuffing:
    1 onion
    2 cups chopped broccoli
    2 cups chopped cauliflower
    2 cups chopped carrot
    1 red pepper
    3 tbsp olive oil
    1 tbsp balsamic vinegar
    2 garlic cloves, minced
    3 cups spinach
    1 cup freshly grated parmesan cheese
    1 cup ricotta cheese
    1 egg, beaten
    2 slices bread
    1/2 cup fresh parsley
    l/2 cup fresh basil
    salt and pepper to taste
    16 manicotti shells
    2 - 14 oz cans tomato sauce
    cheese sauce (see recipe below)
    asiago cheese grated


    Cheese Sauce:
    3 tbsp butter (or marg)
    3 tbsp flour
    3 cups milk
    2 cups grated mozzarella or swiss cheese
    1 tsp worcestershire sauce
    Dash hot pepper sauce (or salsa)
    Salt & pepper to taste

Really Tasty Vegetarian Dish. Actual Serving Size Is Supposed To Be 10 But For My One Full, Stuffed Manicotti Is Plenty
