Ingredients

    2 chicken thighs and 2 chicken legs

    GOYA® Adobo with Pepper, to taste
    (or can mix 1/4 tsp of each: ground pepper, ground ginger, ground chipolte, ground cloves, allspice and cumin)

    1-1/2 tbsp. GOYA Extra Virgin Olive Oil

    1 medium yellow onion, finely chopped (about 1/2 cup)

    1 clove fresh garlic, finely chopped

    3/4 cups Extra Long Grain Rice (I used Jasmine)

    2 cups chicken broth

    1/2 packet Sazón GOYA with Azafrán

    ¼ cup GOYA Pitted Alcaparrado, sliced
    (or make sliced green olives with pimento and capers)

    1/4 cup Frozen Peas, thawed
