Build Your Own Bean Salad

Ingredients

    Try this black bean and rice sald with corn, tomatoes and cilantro.

    Beans: 2 cups black beans; 2 cups cooked brown or white rice.

    cooked/ raw veggies ; 1 1/2 cups each thawed frozen corn and halved cherry tomatoes.

    Extras; 1/2 cup queso fresco cheese

    Onions; 4 scallions

    Herb; 1/4 cup chopped fresh cilantro

    Dressing; 1/4 olive oil and 4tsps lime juice

    Another great variation!

    Chickpea and Broccoli Sald

    Beans 2 cups chick peas

    cooked grain; 2 cups cooked quinoa

    cooked raw vegtables; 3 cups steamed broccoli

    Extras; 1/2 cup toasted almonds

    Onion; 1/4 cup red onion thin sliced

    Herb ; 1/4 cup fresh basil

    dressing; 1/4 cup olive oil and 4 tsps of lemon juice.
