Ingredients
- For Lamb:
3 Tbsp olive oil, divided
1/4 tsp ground tumeric
1/2 tsp ground cumin
1/8 tsp caynne pepper
1/2 tsp ground cardamom
1 tsp kosher salt
2 1/2 lbs boneless lamb, cut into 1-inch cubes
For the stew:
1 onion (calls for cubed but i perfer minced)
3 carrots, roughly diced
3 cloves garlic, minced
1 Tbsp ginger, minced
1 Tbsp tomato paste
1 (14.5-ounce) can chickpeas, rinsed and drained
1 lemon, zested
2 Cups chicken stock or broth
1 Cup dried apricots
1 Tbsp honey
2 Tbsp freshly chopped cilantro leaves
