Granola Bars

Ingredients

    Dry stuff:

    1 2/3 c. rolled oats

    1/3 c. sugar

    1/3 c. whole wheat flour or oat meal (ground up oats) or almond flour (ground up almonds)

    1/2 teaspoon kosher salt


    Healthy bits:

    1/4 teaspoon cinnamon

    1/2 teaspoon powdered ginger tea

    2 - 3 c. Total of dry fruits and nuts
    chopped crystalized ginger
    sunflower seeds toasted
    almonds - sliced or whole
    cranberries
    poppy seeds
    coconut flakes
    dried cherries
    dried apricots
    flax seeds
    pecans
    walnuts
    wheat germ

    Glue:

    1/3 c. peanut butter or almond butter or apple sauce

    1/4 c. honey

    5 t. melted butter or canola oil

    1 teaspoon vanilla extract or almond extract or both

    2 teaspoons maple or more honey

    1 egg + 1 egg white (use when using apple sauce)

    1 big spoon Apricot jam (optional)


    Glaze:

    2 or so tablespoons heated apricot preserves (optional)
