Vegetable Curry

Ingredients

    1 Small Butternut squash peeled and chopped (2 cups chopped into cubes)
    1/2 Medium Red Pepper chopped
    2 cups chopped Broccoli
    Bunch Green(Spring) onions(approx 6-8)
    1 1/2 Cups Chickpeas(drained)
    1/2 cup Carrots, chopped
    2 Tbsp extra virgin olive oil
    1 Can Low sodium chicken broth(or Vegetable if you are a vegetarian)
    2 Medium Vine Ripened Tomatoes chopped
    1/2 Cup dry Quinoa
    4 oz. Coconut Milk
    1/2 Tbsp ground Cumin
    1 1/2 Tbsp Curry Powder
    Salt and pepper to taste
