Spicy Squash Stew

Ingredients

  • 1 12 tablespoons Olive Oil
  • 1 12 Onions, coarsly chopped
  • 4 cloves Garlic, chopped
  • 1 tablespoon Cumin
  • 12 teaspoon coriander powder
  • 1 tablespoon Curry Powder
  • 4 cups Butternut Squash, peeled and chopped (1 butternut squash)
  • 1 cup parsnips, chopped (or use carrots)
  • 1 34 cups Vegetable Broth
  • 1 can Diced Tomatoes (14.5 oz.), undrained
  • 1 cup Frozen Lima Beans, thawed (1 box)
  • 12 teaspoon Salt, divided
  • 1 cup Canned Chickpeas, drained
  • 2 cups fresh baby spinach, (or one box of frozen)
  • 1 cup Light Coconut Milk
  • 14 cup Fresh Cilantro
  • 1 tablespoon Fresh Lime Juice
