Russian Borscht (crockpot)

Ingredients

    4 cups thinly sliced (or shredded) green cabbage
    1 1/2 pounds fresh beets, peeled & shredded
    5 small carrots, halved lengthwise then cut into 1" pieces
    1 parsnip, peeled, halved lengthwise then cut into 1" pieces
    1 cup chopped onion
    4 cloves of garlic, minced
    1 pound beef stew meat, cut into 1/2" cubes
    1 can (about 14 ounces) diced tomatoes
    3 cans (about 14 ounces each) 99% fat-free reduced-sodium beef broth
    1/4 cup lemon juice, or more to taste
    1 tablespoon sugar, or more to taste
    1 teaspoon black pepper
    Sour Cream (optional)
    Fresh parsley (optional)
