Ingredients
- I large Onion (diced)
1/2 Celery Chopped small with leaves left on
1-2 tablespoons pesto (can use basil if you don't have pesto)
1 teaspoon each of oregano and Thyme (fresh or dried)
2 zucchinis
3 carrots
1 fennel bulb (optional)
1 cup finely chopped green beans
1-3 bulbs of bok choy (as desired)
2 tomatoes
1-2 tablespoons soy sauce (as desired)
1 punnet of shitake mushrooms
1 cup of baby spinach
1 large cob of corn
handful of Italian flat leaf parsley
1.5 cups brown or green lentils
1 cup macaroni
Cheese for garnish (if desired)
2-3 litres of stock (I use powdered Massel stock as they are vegetarian - even the chicken one; which i use for this recipe) - basically use the quantity of stock that will give you the required consistency you're after - using powder is good for this - just add to the water.
