2 tbsp olive oil
2 tbsp fresh lemon juice
1/4 tsp finely ground lemon zest
3/4 tsp cumin
pinch cayenne.
Freshly ground salt and pepper
Yogurt sauce:
1 tbsp orange juice
1/4 finely grated orange zest
1/4 tsp honey
3 tbsp plain yogurt
4 oz spinach, rinsed and stems removed
