Citrus Mint Tuna Bean Salad

Ingredients

    1 x 540mL can of black beans, rinsed and drained
    1 x 540mL can of mixed beans, rinsed and drained
    1 x 450mL can of cut green beans, rinsed and drained
    2 x 180g can of tuna, drained
    1 medium red pepper, sliced
    half an english cucumber, sliced
    2 cloves of garlic, crushed and sliced
    handful of fresh mint, sliced chiffonade (little ribbons)

    Dressing:
    Juice of one whole lemon
    1 tbsp lime juice
    1 tbsp olive oil
    1 tbsp rice wine vinegar
    1 tsp ground cumin
    20 good grinds of pepper
    about a tsp of salt (or to taste)

This Is A Favourite Fridge-food For Me. Something To Keep On Hand For Those Moments When I Have No Interest In Cooking, And Just Want To Pull Something Ready-made Out Of The Fridge
