- 2 lbs. chicken breast, no bones or skin
3 cloves garlic, minced
1/3 cup pitted prunes, halved
8 pitted kalamata olives
2 tbsp capers, with liquid
2 tbsp olive oil
2 tbsp red wine vinegar
2 bay leaves
1 tbsp dried oregano
salt and pepper to taste
1/4 cup packed brown sugar
1/4 cup dry white wine
1 tbsp chopped fresh parsley, garnish
