Ingredients

    4 potatoes, sliced 2cm thick
    12 lamb cutlets
    200g Haloumi cheese, sliced thickly
    1 tsp olive oil
    1 tsp dried basil
    1 tsp dried thyme
    zest of 1/2 lemon, finely grated
    2 cups baby greens (rocket, spinach, cress) to serve
    ½ bunch chopped fresh basil, to serve
    juice and zest of 1 lemon, to serve
