    1 1/2 large loaf Italian bread (about 20 oz), cut into cubes and dried overnight
    4 slices bacon, diced
    1 tbsp unsalted butter
    1 large onion, diced
    2 medium carrots, diced
    1 large parsnip, diced
    3 celery stalks, diced
    1 leek, diced
    3 cups mushrooms, chopped
    2 cups chestnuts, peeled and chopped
    1/2 cup pecans, toasted and chopped
    1/4 cup hazelnuts, toasted and chopped
    1/4 cup each fresh parsley, thyme, rosemary and marjoram
    1/2 cup dried cranberries
    2 large eggs
    1-1/2 cups chicken broth
    1 tsp each salt and pepper
