Spinach Salad Part Deux

Ingredients

    4 lg eggs
    3 tbl olive oil
    4 fingerling potatoes (about 12oz) blanched and sliced crosswise 1/2 inch thick
    5 oz baby spinach
    2 links chorizo sliced crosswise 1/2 inch thick
    2 tbl minced shallot
    1 tbl red wine vinegar.
