Ingredients

    1 medium summer squash, halved and sliced

    1/2 large green bell pepper, chopped

    1/2 large red bell pepper, chopped

    1 medium carrot, diced

    4 cloves garlic, finely diced

    1/5 cube tofu, extra firm, cubed

    1 1/2 cups dry couscous

    2 1/4 cups water

    2 tbls extra virgin olive oil

    1 whole cube Knorr Chicken Bouillon

    1 tsp lemon pepper

The Array Of Veggies In This Vegetarian Couscous Are So Bright And Colorful That Even My Daughter (who Is NOTORIOUSLY Picky) Will Eat It Without A Fight. These Are The Veggies I Used, But Of Course, They Can Be Switched Out Depending Upon Preference And A
