Ingredients
- 3 tsp Canola Oil
2 medium onions, diced
3 cloves Garlic, crushed
1 large red capsicum, diced
2 large green capsicums, diced
1 1/2 tins of black beans, drained and rinsed, or 1 1/3 cups cooked black beans
2 (400g) tins of red kidney beans, drained and rinsed or 500g cooked red kidney beans
1 large zucchini, diced
1 (400g) tin of sweet corn kernels, drained
2 (400g) tins of chopped tomatoes in juice
1 (120g) tub of tomato paste (triple concentrated)
1/2 cup vegetable stock (I use 'beef style')
1 tsp chili powder
1 tsp Chili powder
2 tsp ground Cumin seed
1 tbsp dried Oregano
1 tsp Paprika
1/2 tsp ajowan (optional)
3 tsp cocoa powder
8 tbsp Cilantro
