- 1/4 cup soy sauce
- 2 tablespoons lemon juice
- 2 quarts baby spinach leaves (6 oz.), rinsed and crisped
- 3 tablespoons thinly sliced green onions (including green tops)
- 12 ounces shelled cooked tiny shrimp, rinsed
- 1/4 cup thinly slivered red or pink pickled ginger (see notes)
