2   medium fennel bulbs with tops 3   to 4 ounces very thin pancetta (Italian bacon) slices, or 4 slices lean bacon 1/4   cup thinly sliced leek or 2 large green onions with tops, thinly sliced 1   clove garlic, minced 1/4   cup dry sherry, red wine vinegar or vinegar 2   tablespoons honey 1/2   teaspoon dry mustard 1   pound red cabbage, cored and shredded (about 4 cups) 1/4   teaspoon freshly ground black pepper 1/2   cup crumbled feta or blue cheese (2 ounces)
