Pancetta-feta Red Cabbage

Ingredients

  • 2 medium  fennel bulbs with tops
  • 3 to 4 ounces  very thin pancetta (Italian bacon) slices, or 4 slices lean bacon
  • 1/4 cup  thinly sliced leek or 2 large green onions with tops, thinly sliced
  • 1 clove  garlic, minced
  • 1/4 cup  dry sherry, red wine vinegar, or vinegar
  • 2 tablespoons  honey
  • 1/2 teaspoon  dry mustard
  • 1 pound  red cabbage, cored, and shredded (about 4 cups)
  • 1/4 teaspoon  freshly ground black pepper
  • 1/2 cup  crumbled feta or blue cheese (4 ounces)
