~ Olive or vegetable oil 1 large yellow onion, chopped 3 carrots, peeled and diced 2 celery stalks with leaves, diced 4 cloves garlic, minced 3 large (about 4 cups) beets, peeled and chopped ½ medium cabbage, thinly sliced 7 cups water 2 russet potatoes, peeled and cut into ½-inch cubes 1 can (28 ounces) whole tomatoes, chopped, with juice 1 bay leaf 1 tsp. sweet Spanish paprika ½ cup fresh dill, finely chopped 1 tsp. honey ~ Juice of ½ lemon ~ Salt and pepper ~ Sour cream, for garnish
