Cherry and Thyme Shortbread

Ingredients

1 cup (250 mL) unsalted butter, softened ⅓ cup (75 mL) sugar 1 tsp (5 mL) grated lemon rind 2 tsp (10 mL) lemon juice tsp (2 mL) salt 1 tbsp (15 mL) fresh thyme, finely chopped 2 cups (500 mL) all-purpose flour cup (50 mL) dried cherries (or cranberries), coarsely chopped Flour for dusting.
